These gluten-free pancakes are delicious, healthy and easy! There are many variations, but the key is the oatmeal which gives them tremendous flavor and texture. You can also give the pancakes an additional burst of flavor by adding blueberries to the batter.
Top with fresh fruit and serve with butter and maple syrup.
