Use fresh tofu. I have the privilege to get handmade fresh using traditional Japanese methods. It is best to use a firm or extra firm variety for this recipe.
You can use any variety of oil with a high spoke point that is suitable for high-heat cooking. Examples are avocado oil, vegetable oil, sesame oil or refined (not extra-virgin) olive oil.
You can bake tofu in an oven as outlined in this recipe or use an air frier.
Use a silicone baking mat on a shallow pan.
For an extra-crisp texture, leave the tofu in the oven and let cool with the oven door closed.
